Every where I looked "Brahma" referred one way or another to
a Hindu god, therefore capitalized and a proper noun.

I'm not sure what to say about "cheeze" except that I could not
find it in my dictionaries. I will admit I did not check my
slang dictionary.

From Webster's Revised Unabridged Dictionary (1913) [web1913]:

     2. (Zo["o]l.) A valuable variety of large, domestic fowl,
peculiar in having the comb divided lengthwise into three
parts, and the legs well feathered. There are two breeds,
the dark or penciled, and the light; -- called also
        {Brahmapootra}.

From WordNet (r) 1.6 [wn]:

2: any of several breeds of Indian cattle especially a large
American heat- and tick-resistant grayish humped breed
evolved in the Gulf States by interbreeding Indian cattle
and now used chiefly for crossbreeding [syn: {Brahman}, {Brahma},
           {Brahmin}, {Bos indicus}]

Unfortunately, the online versions don't discuss capitalisation.
