What's for breakfast these days?? How's it different for work mornings
as opposed to offdays??

I've been in non-breakfast mode again lately.  Bad Valerie!
Sometimes on the weekends I'll make pancakes, but that's very rare
lately.  One o' these days I'll go back to the oatmeal-and-raisin thing.
I try to eat a banana or something before the Saturday walks so that
I'm not ready to eat people's shoes by the end of the walk, but I
usually forget.

During the week and the rush of Daddy's Taxi (STeve has to drop me at
work by 8, Damon at school on the other side of town at 8-8:10 and Staci off
by 8:15) he makes oatmeal for him and the kids while the kids are getting
dressed or we make a quick stop at Kroger's for yogurt and donuts or muffins
(I keep yogurt in the fridge at work and add some grapenuts to it).  On the
weekends we either eat out or send Damon up the street to the Bagel Factory.

On work days it's a warm croissant with melted cheese from the snack 
bar.  On weekends I cave into family pressure and make pancakes and
french toast as a rule.  Last weekend I even made whipped cream for 
the pancakes and served them with wonderful fresh raspberries!

I usually eat fried potatoes with onions, bacon and eggs with orange juice
for my daily breakfast.  The kids prefer sausage biscuits or french toast with
cinnamon.

Do you worry about the amount of fat in your breakfast?


You know those cups of soup where you just add hot water?  Recently the same
companies have come out with breakfast cups that are similar.  I tried two
flavors recently.  They were very good, but much saltier than I'd've liked.
And when you figure I can make from scratch for pennies what they sell for
$1.29, and I can control the salt level myself, well, I think I'll go back
to oatmeal from scratch.  One idea I did pick up from them is that they had
dried bananas and other fruit in the breakfasts; those would be great to toss
into my own oatmeal.  Whole Foods has a huge variety of dried fruits.  I'm
looking forward to experimenting....

I drain and dry the fat off of everything as much as possible and watch fat
at other times for the most part.  I use cooking sprays and have been known
to wash meats under hot water to remove the grease and oils.  However, there
are times when I just gotta have my fat...then I resort to french fries, onion
rings and chicken in the deep fryer...mmmmmmmmmgood!

During the week, when in a huge hurray I have orange juice, a non-fat yogurt
and de-caf coffee with skim milk.  Or if I miss breakfast at home, at work,
I make a cup of decaf coffee and buy a bagel with cream cheese.
On the weekend, all hell breaks loose and we might have lowfat pancakes, or
french toast, or bagels and lox, or we really lose control and go to Angelos.

for breakfast over the holidays with hot cocoa.

Sure Valerie...these are really yummy!

1 TBsp yeast
1/4 cup warm water
3/4 cup milk, scalded
1/4 cup oleo
1 tsp salt
2 TBsp sugar
3 cups flour
1 egg beaten
cinnamon, brown sugar and melted butter

Soften yeast in warm water.  Scald milk and add butter, salt and sugar,
stirring until sugar is dissolved and let cool to lukewarm.  Add 1 cup of
flour and beaten egg and stir or beat until smooth.  Blend in yeast.  Add
remaining flour and turn onto a floured board and knead until dough is  smooth
and satiny...about 5 minutes.  Cover and let rise in a warm place until double
in size...about 1-1/2 hours.

New Way...
Gently heat milk and water in microwave.  Follow your bread machine's order
of ingredients.  Mine:  Place liquid in first, followed by flour, then other
ingredients, saving yeast until last.  Turn on knead only function or stop
machine at end of kneading procedure ( although it makes a great bread for
french toast!).  Lightly spray bowl with pam and cover and let rise.

Continuation...
When doubled in bulk, punch down, divide in two and roll out to about 14 inch
thickness on a lightly floured board.  Try to make a rectangle when rolling
the dough.  Slather with melted butter, crumble dark brown sugar onto it, then
sprinkle with cinnamon to taste.  Leave one edge of the dough sugar and
cinnamon free for joining purposes.  Roll the dough into a long rope, sealing
the edges.  Spray your baking sheet with Pam and cut the roll into 1 or 1-1/2
inch pieces, placing them about 1" apart.  Bake at 350 for 10-12 minutes. 
Remove to cooling rack or wax paper immediately.  

My mom always included different nuts to give a sip to the buns.  She also
took each cut piece and twisted it before putting it on the pan.  She called
them cinnamon nut twists.  I am too lazy to do this, so just make regular
cinnamon rolls.  Can be eaten without topping, but ...
Mix soft butter with 1 TBsp of milk and enough confectioner's sugar to form
a medium thick frosting...frost while warm or make the frosting thin and frost
when cool.

This is my great grandmother's recipe...and one of my favorites, especially
now that I have the bread machine!  Hope you enjoy it!

FORGOT!!!  ONCE ON THE BAKING SHEET, MUST LET RISE AGAIN BEFORE BAKING!

then was in a 'healthy' sort of mood, so I just had some salad for
breakfast... It hasn't settled yet, I'm still hungry!

During the week,  I normally have cereal with fruit, a couple slices of toast,
and coffee.  During the weekends, though, I splurge and have either pancakes
with a couple strips of bacon or hashbrowns and eggs with some kind of fruit.

I normally have cold ceral with milk for breakfast.  I lean more
towards hot cereal in the winter.  I especially like cheerios 
for cold, and cream of wheat for hot.  I sometimes have a small
glass of OJ.  I gave up coffee last year, alas.  Sometimes I 
have a cup of herbal or decaffeinated tea.  Once in awhile I
cook cheese omelets with sausages and english muffins on the
weekends.

As I type, my almost-finished bowl of shredded wheat and sliced
bananas is by my side. Still about half a cup of coffee left. This
is my "first breakfast". In a couple of hours I'll have a "second
breakfast" consisting of a bagel and a glass of orange juice.

This is my typical breakfast, although the particular cereal and
fruit topping varies from one day to the next.

I wouldn't say that I'm all that trim, but note that my two
breakfasts combined have fewer calories than a lot of people's
one breakfast.

Can we talk about bummer breakfasts here?  I love Zingerman's.  I'm a
loyal Zinger-person.  But last Sunday I showed up for my Raisin-Pecan
toast with light cream cheese, OJ, coffee, and two violists playing their
viols, only to fine they were out of OJ, out of light cream cheese, the
coffee pot was dry and the violists were nowhere to be heard. 

Life went on.

I miss my good Zingerman's bread!! The last time I was in town,
I brought a couple loaves to bring home [including the raisin pecan
which I had never tried before].  I had put some of the bread
in the freezer for later... but now that later is gone,  I'm in
withdrawl!! Guess I'm going to have to place an order sometime soon!
[Speaking of which, I have a couple friends here in Durham that are
from AA, one of which used to work at Zing's!]

Zingerman's bread!  Yum!  I *love* their chocolate cherry bread, and Italian
bread is yummy too.  In fact I think I've liked all the breads that I've tried
there, though those two are the ones that stick out in my mind most.

Breakfast? Can't eat for an hour after taking AM medicine, and I'm at work
by then. (Un)fortunately, there is a Sweetwater's Donut Mill right next door,
so I usually have a plain bagel and tomato juice around 9am, then a piece of
fruit between then and lunch.
Weekends usually involve a big farmer's omelette (sans meat).

Mmm, thanks, that was delicious!  Especially having just finished
my workout this morning!  :-)

This next week is going to be a busy week for me-between planning
on seeing the peak color change in the mountains early in the week and then
having to work 3 out of 4 days when I get back, I'm currently planning
on placing an rder for early NEXT week!  :-)  [Now to go get my
catalog and start salivating over the pages!]

Try an apple for breakfast, or toast with jam. You mentioned trying to lose
weight in an earlier item, which means you should not skip breakfast. You need
to get your metabolism running, and having something in the morning should
keep your hunger from taking complete control by lunchtime, too.

Jim says he eats more like 3000 calories a day.  Today the vitamin E study
nutritionist advised him to eat more protein and calcium and less olive and
sesame oil.  I think he simply guessed wrong at the amounts he reported eating
- 1 oz olive oil, 8 oz rice, 4 oz beans -more like 1/2 oz oil, 16 oz rice,
8 oz beans.  And his cholesterol is too low (140 total, similarly wrong for
HDL and LDL).  She suggested eating cheese.

For breakfast Jim cooked the lima beans I had soaked, peeled some cooked
potatoes, and fried up radishes, cauliflower, onions, brocolli, carrots with
peanuts to put on top.  Filling.  More left for lunch.

The last meal I cooked  was walleye, served with a cold cracked wheat
salad and steamed asparagus.

I've been playing around with fish lately, trying to figure out what works 
and what doesn't.  My favorite catfish recipe involves a dredge in 
cajun-style seasoning then a quick bake at 425 degrees. Salmon I like 
marinated in asian-style seasonings and broiled. Walleye (or other tender 
white non-oily filets) I've not been so happy with despite trying a number 
of techniques.

So the other night I gave walleye another shot, this time going back to 
basics.  I simply sauted it in a tablespoon each of olive oil and butter.  
When the fish was done I removed it then added a little fresh lemon juice 
and chopped parsley to the pan, scraping up the bits, then drizzled it 
over the fish. Too simple, but it worked. 

Dinner was 10 minutes, start to serve.  Sometimes, that's important.

not sure I know what a walley looks like)

Skipped breakfast and am having a Subway sandwich for lunch. Also kipped the
Indian chai tea as we've just moved (yesterday) and I neglected to make sure
we had basic breakfast items on hand :/

Haw. I didnt make that breakfast. We have a cafeteria at work that 
serves breakfast. I always eat breakfast here at work. 

It occurred to me recently that I have always worked someplace where I 
could eat breakfast so I almost never eat breakfast at home except on 
weekends.

egg whites.  I have this little three-compartment tray thingie that 
sits in a small, covered pan of simmering water.

Here's an interesting breakfast recipe that I just came across [from the
cdc website  mentioned in 0 that I'm finally checking out]:

Apple Sausage

1. Mix one large finely chopped apple with a pound of lean ground turkey
or chicken.

2. Season with sage and rosemary and shape into breakfast sausage
patties.

3. Cook in skillet over medium heat for 4 to 5 minutes on each side
until meat reaches an  internal temperature of 165  F.

I do a version of that for a hearty camping breakfast.

Leave the apples out of the sausage mix.  Brown the sausage, and then
saute apple slices with it for the last 10 minutes or so.

Breakfast for me is usually juice, a banana, and either a bowl of cereal
or a couple of Clif bars.  We just picked up a 1.5-quart slow cooker to
use for making overnight steel-cut oats, but haven't used it yet.

a suggestion on the overnight oats.

I find putting the oats and water in a small pyrex custard cup gives me
a better texture.  

You might try stacking them if they won't fit comfortably side-by-side.

I've recently gotten back into eating oatmeal again.  My dad gave me
some  blueberries today-so I'll be adding them to my next several bowls
of the  oatmeal.  :-)

And am also going through some clementines, too.

[other than this stuff, I haven't been eating very healthy lately and
I'm  really beginning to feel it.]

For whatever reason, a few of the photos made me laugh. :-)  There's a 
number of them I'd love to try but a few, well, let's just say that they
 don't look at all appetizing and thus, I'd pass on breakfast.

I wonder how many of these breaksfasts were on weekdays and how many
were  on the weekend? And thus, how much of a difference would there be
in what  these people would've had?
