Every day after lunch I tend to get all sleepy and such - I'm beginning to suspect it's the foods I eat for lunch - like cheeseburgers, and hot dogs. What would you suggest I have instead?

A salad with a lean source of protein. Also, I have found that if I'm sedentary right after lunch, it plays a lot into it.
I'll look up the research, but primarily avoid carbohydrates during the working day if you want your brain to stay nimble. (I assume you're not having anything alcoholic with your lunch). When I'm running a workshop or conference, I always engineer the menus so that the food isn't interfering with my presentations. For example, mid morning break tends to have high protein items, like cheese cubes. Brooke's lunch is perfect, Have whole fruit instead of fruit juice. Veges are even better than fruit.
I have been skipping lunch on most days or having something very light, like a salad or a cup of clear soup, and that seems to have resulted in my being more alert in the afternoons.
re #0 Fruit and veggies mostly. I'll have a veggie or tuna sandwich with a side of tea and a yogurt most lunches. The carbs will put your insulin on a roller coaster and suck all the blood down into your stomach from your brain if you fill up on rice or bread too much.
Coffee. Lots and lots of coffee. ;-)
Re 5> That would translate to tea for me - but I don't like the idea of running to the bathroom every hour :P I guess pasta salad is out then. I like the tuna salad sandwich idea - but I think I'll have to stick to the salad - pasta salad is out I guess :(
