re #73: The Aztecs weren't particularly weak militarily but it's
certainly fair to argue that their society was weak. One of its
problems is that it was composed in large part of conquered tribes
who in many cases had been treated quite brutally by the Aztecs and
who thus didn't have a lot of reason to love the existing system
more than the brutal system of the conquistadores.
But we're ranging awfully far afield now from jep's butcher query,
so I'll make only a token joke regarding the Aztec's notorious
practice of cutting the hearts from still-living human sacrifices..

I am late coming to this item but I dont think anyone else has
mentioned Eastern Market in Detroit. I know you can get bulk meat
there. A quick web search turned up these folks:
