Where's the Beef?

What kinds of meat [beef/steak...] do you enjoy eating? How do you like to
cook it [especially when grilling outside is not an option]? Any good recipes?
[Sorry to the vegetarians out there...]

My mother used to make a good pot roast; I've seen some recipes for crock pot
pot roast that night be good. And my grandmother used to make some wonderful
roast beef [and leftovere roast beef sandwiches are great]. I haven't done
much meat cooking other than burgers and hot dogs and occasionally, chicken
[and have even done a turkey a couple times, though its been years]. Though
I don't eat red meat all that often these days, sometimes I really get a
craving for it, thus, I need to try making some at home once in awhile.

Oh, and when I used to visit an old boyfriend in Chicago, I loved the Italian
Beef sandwiches that's popular there.

I'll eat just about every kind of meat save for lamb and goat. For me
it's always mood - sometimes I want red meat, sometimes pork,
sometimes seafood.
Things I miss? Sad but true, it's coney dogs. We don't have anything
like them here.

Ooh, coney dogs, I haven't had one of those in years! I used to like them with
a bit of mustard. People eat goat? Hmm. I do enjoy lamb though I don't have
it very often. I've tried venison before; it was ok but I wouldn't go out
of my way for it or order it in a restaurant. Wasn't crazy about a bison
burger i tried. I did like cornish hens the one time I had it [and I think
I've had duck before but don't recall how it tasted.]
For a variety of stuff with hamburger [or any ground meat], I used to brown
some up and refridgerate it to use later for things like tacos, to mix in with
noodles or rice, stuff like that. The other day, I founds some of those
pre-formed chuck-burgers as well as buns on sale, so I have that in the
freezer, ready to cook as i want them. A couple years ago, I remember making
lamb-burgers which turned out pretty good....
But I do want to learn how to do the various cuts of meat, too; perhaps I can
find stuff online.

I love meat. LOVE IT. I love eating cows the best but I also like
eating lamb, pig, chicken, etc.
I dont know a lot about cooking it though. Sometimes I'll cook a steak
on my George Foreman grill but steak is really easy to cook. Just a
little while on each side and YUM. I like to put salt on mine but
otherwise I dont do anything special.

Recently, I had some really good steak at my brother's house. I know he didn't
use the outdoor grill and I don't think they have one of those forman
grills... So he must've just cooked them in the oven, maybe with some kind
of marinade or something--as the steaks were still juicy.

I've made a few good sirloins on a 12" square griddle which I got for free
for buying a Chef Emerile cookwear set.

Free stuff is always nice. Is it a stove top griddle or something you use
in the oven? [Sounds like a stove top type thing.]

Its a stove top but it would survive in an oven since its all anodized
including the handle.
